Wanna quick and delicious combo for dinner? This recipe is simple but Oh So Delicious!
Clams and Chicken Sausage makes for not only a beautiful dinner but also clean, healthy and nutritious meal. It takes about 15 minutes to prepare and Voila! Here it is 2 servings:
16 oz of fresh clams cleaned and rinsed
2 links Chicken & Apple Smoked Sausage such as Aidells
5 cloves garlic crushed
10 cherry tomatoes sliced in half
3 large button mushrooms sliced
1/4 red onion sliced thinly
Handful of Kale
1/4 cup of olive oil
1/2 cup of white wine
Place the olive oil in a large skillet and heat to medium heat. Add the mushrooms and onions and saute until the onions are translucent. Add the garlic and cook for an additional minute. Add the sausage and a small amount of water. Cover with a lid and steam the sausages for 5 minutes or until done. Slice the sausages while in the skillet and then add the tomatoes and cook with the lid on for another few minutes. Season with pepper. In another large skillet heat to medium high and then place the clams and the white wine in and cover. Cook for 4 minutes. Any clams that aren’t open should be discarded. With a slotted spoon, remove the clams and place them in with the sausage mixture and stir together.
Plate with a slotted spoon over a bed of kale and garnish with some fresh basil. There’s no need to salt as the sausage adds the salt. The fat from the sausage remains in the skillet so only a small amount of olive oil coats this scrumptious meal. Oh so good with some red wine!
