I am not a nutritionist, I’m a Fashionista who loves good nutritious food that’s easy to make. Part of my program for fitness is eating good stuff. Looking fab at any age takes a little effort. But that’s OK; looking and feeling fab is worth working for.
Today, I’d like to share with you a very simple recipe that is not only beautiful like the Turn It On fitness fashion, but also fuels your engine for your fitness practice. This recipe is great as a stand alone dinner or as a side dish to fresh grilled fish or chicken.
Look at those veggies! Let’s get started. Whatever you do, don’t take the coats off of these beautiful veggies. Leave the skins in place as they do two things: they seal in the good stuff and add beauty while you are enjoying them. You know that’s what we’re talking about…looking and feeling good! It also makes it easier to prepare.
The ingredients and amounts always vary according to what’s in the refrigerator. I try to make a beautiful selection of colors. Color represents the different nutrients in every colorful bite. All ingredients must be fresh (green beans, rosemary, yellow and red beets, garlic…lot’s of it, brussel sprouts, red peppers, olive oil, and sea salt). Throw it all in a bowl and mix it with some olive oil. It’s actually better if you leave the rosemary out until you serve it and then sprinkle it over the veggies. Roast it slowly in a 350-375 degree oven until it looks the way you want it. My husband likes everything crispy and shriveled. I like mine big and crunchy. Either way (30-45 minutes or so). It has so much nutrition, very few calories, lots of fiber, and great taste. You’re on your way to a healthy lifestyle with this roasted veggie delight!
